Grilling is one of my favorite things to do. I love how flavorful everything is with those good char marks. Up until a few years ago I used a gas grill exclusively. It was convenient. Just turn it on, wait a few minutes and grill. But a friend of mine got me into cooking with charcoal. It takes a lot more time and planning, but the depth of flavor that’s added with the smoke is incredible and worth the added effort.
